It’s the time of year we like to whip out our trusty, and well-used, family cookbook. It’s the one that has dozens of fingerprint smudges, well-worn pages, and about a million memories all crammed into one. This recipe for potato chip cookies comes from YOYOMAMA’s Donna West. Her Great Aunt Alice and Great Grandma Schneider perfected this recipe and it’s been her family’s go-to holiday cookie for years.
Potato Chip Cookies
1 cup margarine
½ cup sugar
½ cup crushed plain potato chips
½ cup chopped nuts
1 tsp vanilla
2 cups flour
Pre-heat your oven to 350F. Cream together margarine and sugar. Add in the remaining ingredients. Form dough into balls the size of a walnut. Place on a baking sheet. Grease the bottom of a glass, dip into sugar and gently press the glass onto the cookie balls to flatten. Bake for 10-15 minutes.
Notes: You can sub butter for margarine and leave out the nuts if your family prefers nut-free cookies. Donna and her family like to top the cookies with coloured sugar before baking. It makes them extra festive.
Fun recipe fact from Donna, “this recipe was written when margarine just came out – it was called Oleo and as my family is from Wisconsin – the Dairy State – my Mom remembers driving to Illinois to buy Oleo as it was not allowed to be sold in Wisconsin – like bootlegging!
