Happy Friday Mama’s ! 🧡

We couldn’t resist this twist on waffles from @karlenekarst ! Karlene shares her Savoury Spinach-Cheddar Waffles 🧇

Here’s a savoury twist on the classic waffle that could also double as lunch!🙋🏼‍♀️💃😂

I love the addition of the spinach and cheddar to these waffles. Top or dip with plain Greek yogurt for a satisfying , unexpected and “fun” food choice. 💛 And these are great cold as well, and could easily be sent in a lunch box.

Savoury Spinach-Cheddar Waffles

Prep Time: 10 min
Cook Time: 15 min
Servings: 8 small waffles

Ingredients:

• 2 cups all purpouse cooking flour – can sub for spelt flour
• 2 teaspoons baking powder
• 1 teaspoons sea salt
• 2 eggs
• 2 cups almond or coconut milk
• 1/3 cup melted coconut oil
• 2 cups shredded cheddar cheese
• 2 cups packed baby spinach

Direction:

1. Whisk together the flour, baking powder, and salt in a large bowl and set aside.
2. Place the eggs in a medium bowl and whisk until just broken up. Add the milk and melted oil while whisking constantly.
3. Add the cheese and stir until combined.
4. Add the milk-cheese mixture to the flour mixture and stir with a rubber spatula until the flour is just incorporated.
5. Lastly mix in the spinach.
6. Heat your waffle maker. Scoop out the waffle mixture and add onto the waffle iron. Cook until the edges are crisp and the color is golden brown.
7. Enjoy your waffles with extra shredded cheese, sprinkle of fresh herbs or a dollop of Greek yogurt.

We sat down with Sabrina Virdee, a super mom and amazing woman, to ask her for some insight on being a mama to two young kids, she had a wealth of knowledge to share with us. ⁠⠀

Q: Did you imagine that you’d be a mom at the age that you became a mom?⁠⠀
⁠⠀
SV: To be completely honest I never imagined myself becoming a mum. While all my friends talked about when they got older, getting married and raising a family, it was never on my radar. –Ironically, I was the first one out of my friends. It was meeting my husband that had me change my mind. We were together for about 8 years before we decided to start a family. For us it wasn’t easy. We went through loss, multiple procedures, multiple specialists, bed rest and pre term birth. Becoming a mum at the age of 28 and a mum of two at the age 32 was the age and the time that was planned for me. The universe speaks in the most mysterious ways.⁠⠀

Happy Friday Mama’s 💜

Are you looking for a yummy recipe to keep you filled all weekend ... or at least until lunch 😂 Here is the perfect recipe from @annaliisakapp

Sweet potato toast with avo + poached eggs 🥑😍

I think we all need a little comfort food right about now 🙃

Here is the recipe:
👉2 slices of sweet potato, about 1 cm thickness, toasted 3x
👉 2 #organic #freerange eggs poached for 6 min
👉 2 kale leaves, sliced very thin + chopped. Steam for 2 min.
👉 1/2 avocado - smashed on sweet potato toast once ready. Sprinkle with Himalayan salt.
👉 Assembly: add kale, eggs, + 2 thinly sliced red onions. Sprinkle with red chilli flakes + a pinch more salt.

Enjoy mindfully. Take note of the present moment, and realize you can create peaceful moments in your mind ✨

These foods also contain important nutrients like magnesium & B vitamins to support your nervous system 💪
