Is there any day, problem or party that isn’t made a little bit better by cupcakes? And when those cupcakes have the perfect icing to cake ratio, taste yummy and are mini works of art, well, what’s not to love? After a quick glimpse at baker Lynday Sung’s blog you won’t be surprised to hear she graduated from Emily Carr and combined her artistic bent with a love of baking to create Coco Cake, a little local cupcake catering company.
Sung’s handmade artistan cupcakes include flavours like Coco Ganache, Lemon Frill, Berry Good, Raspberry Rose and more. She’ll also make vegan, gluten-free and organic cupcakes if that’s what you desire. And sure her everyday cupcakes are lovely (and delicious), but give her a challenge, say Under The Sea! Cupcakes, a Very Hungry Catepillar mise-en-scène or a Jaws cake complete with dismembered body parts and she truly shines.
Strictly in the interests of research we put Coco Cake’s “everyday” cupcakes to the taste test, trying her Brown Velour – dark chocolate with vanilla cream cheese frosting, Raspberry Vanilla – raspberry jam filled vanilla cake with raspberry buttercream and Coco Cake Matcha cupcakes. We love cupcakes but we don’t like them too sweet or weighed down by icing, so we appreciated being able to distinguish flavours like raspberry and chocolate rather than just being overwhelmed with sugar. Plus the cake part of the cupcakes isn’t just a vehicle for icing, but delicious in its own right. Alas, our waistline’s a bit worried to hear that she’s experimenting with artisan ice creams.
You’ll occasionally spot Sung and her sweets out and about at Blim’s Community Markets but she mostly does business via custom order. Next time we throw a soiree we’re going to try and come up with a super duper challenging theme to put her decorating skills to the test. But we’re pretty sure that no matter how hard we tried she’d come up trumps and wow everyone.
